  • Friday: South of France Tomato Soup <-- from the Splendid Table cookbook my mom got Brad for Xmas

I'm stuffed from our Monday selection right now, but wanted to give you the run-down on our menu this week:

  • Sunday: Proscuitto Ravioli (a Giada Everday Pasta recipe and SO delicious!)
  • Monday: Mushroom Chicken Bake
  • Tuesday: Chile Pie (now a Bobenmoyer family staple; cooked turkey sausage mixed with kidney beans, salsa and canned tomatoes then topped with a cornbread/cheddar cheese mixture and baked)
  • Wednesday: Leftovers
  • Thursday: Asian Veggie Noodle Bowl
  • Friday: Black Bean Burgers <-- just got this recipe in this month's Gourmet magazine in their TenMinuteDishes section; will be our veggie dish for the week
  • Saturday: *Eric's 30th Bday Celebration!*

Hi everyone and Happy Tuesday,

Brad and I have really hectic weeks ahead as our accounts go into planning mode for 2009. Whew! I know I have 6 meetings alone scheduled for tomorrow, and (YIKES!) 8 on Thursday. There aren't enough hours in the day!

So needless to say, some home-cooked meals will be in order:
  • Sunday: Eggplant Marinara Pasta Casserole
  • Monday: Ray LaMontagne concert! More to come on that...
  • Tuesday (tonight): Madeover Meatloaf <-- so easy to make, 1 hour in the oven and done!
  • Wednesday: Chicken Coconut Curry <-- still have all the ingredients from a couple weeks ago
  • Thursday: Hummus Veggie Wrap
  • Friday: Grilled Fontina Sandwiches and Roasted Red Pepper and Tomato Soup (leftover cheese from the Casserole and the soup is an organic premade mix I found)
  • Saturday: Mozzerella Stuffed Turkey Burgers

This Week's Menu

As you may or may not know, I've become a total foodie... and it's been a blast. Coming from someone who used to have a horrifically limited palette and get freaked out by 'mixed' foods (pizza, stir fry, i.e. anything that encompassed more than 2 ingredients blended together), trying new things has become a weekly staple.

We create a menu every week, buy according to it, and try our best to use any remaining ingredients from week-to-week. Oh, and there's a mandate on one vegetarian dish a week and at least one night of leftovers.

So with that said, here's what's on the menu for this week:

  • Tuesday: Vegetable Stir-Fry with Tofu
  • Wednesday: Open-Faced Egg Sandwiches with asparagus & hollandaise
  • Thursday: Leftovers
  • Friday: Coconut Curry Chicken
  • Saturday: Take-out -- likely Benito's Pizza since family will be in town awaiting HWB's 1st bday party
